Le Celeste is a restaurant located
in Lyon, France, on the 32nd floor of one of the most famous tower in Lyon.
They enjoy panoramic views of Lyon. In order to highlight this incredible
space, imposing luminous suspensions were installed in a
"constellation" spirit, echoing the famous expression "have your
head in the stars". The Celeste Restaurant reigns in a modern and warm
atmosphere, enlivened by lights, which respond to the light variations of the
day, and which encourage visitors to take their time.
The Culinary Experience
Fabrice de Flue has been in charge of the cookers at Celest Bar & Restaurant since February 1st, 2017. This great figure of high gastronomy in Lyon has one ambition: to make the place a renowned restaurant in the region.To begin with we were able to enjoy a carrot velouter, fennel and tataki tuna. I've never eaten a tuna so flavored and melt-in-the-mouth. The tuna had a smoky flavor that was softened by the carrot velouter.
Next up, was the smoked "perfect" hen's egg, clove chanterelles, mushroom smoke with hazelnut oil. A perfect combination of smell and taste with a total melting from the first bite. The flavors of all of these ingredients really came together to make the perfect dish.
Roasted veal sweetbread apple, grape potatoes and fresh cep mushrooms, short juice. This dish is one of the most widespread dishes in France, an extraordinary taste with a power in the mouth that cannot be measured.
The cheese of “Chez Mons” is one of the best cheesemakers in France known in the StĂ©phanoise region of Montbrison. Specialized in the maturing of exceptional cheeses. Directed by HervĂ© Mons, Best Worker in France in 2000, it offers a range of about 200 cheeses of all kinds, depending on the season. With two generations of experience, it has built its reputation on the quality of its products and its know-how. Here the selected cheeses were reblochon and goat cheese accompanied by truffle honey and hazelnut shavings, which goes fabulously well with these cheeses.
Fig, chocolate and sweet spices. A flavor that I have never found elsewhere the power of spices that mixes with the sweetness of fig is surprising and incomparable. And the chocolate sorbet was so intense that I felt like I was eating a fresh cocoa bean. This dessert was the perfect final note to finish this delicious tasting meal.
