My Experience

Moroccans live by this motto daily by having a breakfast that looks just as good as it tastes ! Recently I spent a summer in Morocco completing an internship for Club Med. While living there, I got to experience many aspects of their culture, including the food!

You might think looking at this picture: "Wait, am I in Morocco or France ?" Well, Morocco has a long history with France that begun in 1912 with the Treaty of Fez. Moroco then became home to half a million Europeans.

They formed half the population of the city of Casablanca. The kingdom took back it's independence in 1956, and the European element largely departed, but the cultural influence is still very much present throughout the country's culture.

The Moroccan breakfast varies by region but the following one is a pretty common one.

Pancakes

The first pancake from the bottom is called rghayef and it is very similar to a crepe. The pancake can take various forms and change names depending on how the dough was formed.

The second pancake going up, called beghrir, is cooked like a traditional pancake, except you don't flip it when cooking. This causes all the bubbles to form at top creating its signature look.

Pro Tip: Eat it with a lot of the honey and butter mixture, it makes it exceptionally good!


Hercha is the third one pictured and it is a very simple recipe, a traditional round bread made with semolina flour, which gives it a cornbread-like texture. They are usually served with honey or jam, although it can be paired with salted condiments such as cheese or even olive oil.

Drinks

Mint tea is a favorite by Moroccans and anyone who ever tasted it, especially when its served on a silver platter.

Morocco is famous for its mint tea. Tea goes with practically any meal of the day. It is traditionnaly sweet and made in a silver metal pot and poured into a small glass.

Freshly squeezed orange juice and chocolate milk are also common specialties.

A Moroccan breakfast is a true dinning experience. I hope to come back soon to this beautiful country. In the meantime the gorgeous pictures that I captured there will have to do!
